Engine running lean

Evening chaps,
I've just started my car up for the first time. It's running but running lean, haven't set the ignition timing up yet - just twisting the distributor until I here it running ok. However the exhaust manifold is red hot, there is a screw on the back of the throttle body - what does that do? Or anywway of stopping it running lean?

Have you checked with the CO pot has been set to?

No mate, how can I check that?
I haven't adjusted anything other than distributor and Theottle idle speed

I've set my co pot to 600 ohms now,
So just need my timing set up now also.
However the screw at the back of my throttle body, does anyone know what that's for?
Also can we add photos from iPhones, I've tried uploading some however it won't work!
