they aren't g40 specific, one from any 1272cc mk3 will do. Also late mk2 ones with hydraulic tappits will do as long as you blank off the fuel pump drive hole.
what hayes means is all the head castings are the same, its the valves that are different

sorry yeah, the g40 exhaust valves are sodium filled to keep them cooler. but really, I'd not worry about that too much, anyone with a big-valve head isn't using sodium filled valves (myself included) and doesn't have any problems :D
I dont think g40 valves are available new any more no, perhaps someone has a spare set? Not sure where all the ones taken out of heads that have had bigger valves go!

Valve metallurgy/material is very different now though- the number of cars using sodium filled valves back then was few and far between (think Ferrari!) so an original Polo valve probably isn't up to the job, especially as they cost so much VW had a reason.
The reason BV heads don't have them is they use a more modern valve with a different metal composition, I'm not sure of the chemical changes between them, but there's definitely a difference, so I would say a standard Polo head isn't up to the job.
