185/50's is the best compromise IMO.
The correct rolling radius, not too heavy on the steering and better wet weather performance due to the slightly narrower footprint. Fitted on sensible width and offset wheels (ie 6X14 ET38) torque steer shouldn't be too bad either. Personally, I feel a 185 tyre fits a 6" wide rim better than a 195 too.
Another often overlooked problem with ultra low profile tyres is the lack of compliance. Lets face it, our roads are pretty poor and all road cars need compliance for the suspension to be able to work properly. A tyre should act as part of the suspension. Obviously there isn't a lot of difference between a 195/45 and a 185/50 tyre, but every little helps.
