Alright guys, fitted one of these off a mk2 golf 16v, bled all the brakes perfect no air whatsoever, but theyre binding theyre constantly on, any ideas?

Sounds like there's a blockage stopping the fluid bleeding back. Quite possible if it's a used master cylinder.

Ive fitted a brand new unit the one side only a few days ago as the bleed nipple snapped off in the old one so could that have anything to do with it?

if all four brakes are constantly on all the time then I'd probably say it's a duff master cylinder although I've never seen anything like that happen. Usually a duff master cylinder means you have no brakes.
