I just ripped my old metal lines from out of my Mk1 Golf.
I wanna replace with copper pipe down the length of the car, I don’t want to use the g40 lines as they don’t fit my old school clips.
Is 5/16th pipe sufficient for supply and return on a g40?

I think that's a bit small, I'm sure it's smaller than the standard plastic pipes are (although I'm not with my car right now so can't check for sure). I would think the 3/8" OD pipe would be closer if not the same.
